This coffee comes from Tarrazú, a region that in Costa Rica is almost a synonym for good coffee. A mountain climate, volcanic soils and natural biodiversity let the cherries ripen more slowly, build up juiciness and give a clean flavor.
Ripe Red Catuaí cherries are selectively handpicked, fermented for 18 hours in the shade, dried on African beds for about a month, and then left to rest. This gives the cup more berry sweetness, a soft wine-like acidity, and an aftertaste that lingers instead of cutting off right after the sip.
