La Cascada comes from Finca Quebraditas in the Huila region, in the Oporapa / Santa Rosa area, at elevations of 1,600–1,850 meters above sea level. Huila is renowned for its micro-lots with vibrant acidity, clean cup profiles, and complex aromatics. At the farm, producers work with controlled fermentations and innovative processing protocols to highlight the coffee’s unique character.
This lot features a distinctive drying and processing approach. The process includes controlled oxidation, fermentation, a rapid change in water temperature after fermentation, and slow drying. These steps are not just for the sake of complexity—they help create a cleaner, sweeter, and more expressive cup.
