Coffee from the famous area of Ethiopia, where coffee was born. Grown high up in the mountains, 1960-2090 meters above sea level, this coffee takes in all the magic of the Yirgacheffe hills. Local farmers grow it on small pieces of land, usually smaller than a football field. They take good care of each tree, using old ways without chemicals. The coffee grows in the shade of other plants, which makes it taste special. The ripe coffee cherries are picked by hand and taken to the Idido work station. Here, they carefully sort out the bad cherries. Then they dry the good ones on raised beds for about 2-3 weeks, turning them often so they dry evenly. When brewed as filter coffee, Idido Yirgacheffe reveals notes of jasmine, lime, and red apple. As espresso, it has notes of red apple, peach, and lime.
