SIRIUS — a limited release from Shantawene: an explosion of pineapple and Sicilian orange, mellowed by floral honey. Over 300 hours of anaerobic fermentation and the "Sleeping Bag" drying method emphasize its multi-layered complexity.
Overview
The name SIRIUS refers to the internal micro-lot grading system used by the Dukamo family at the Shantawene washing station (Sidama, 2100–2210 m, old-growth forest). After meticulous sorting, the cherries are fermented in sealed, airtight tanks and then slowly dried in "sleeping bags" to preserve their delicate aromas. Over fifteen years, Asefa and Mulugeta Dukamo have grown from a small family farm into a network encompassing 3 farms, 42 washing stations, and 6 drying fields, partnering with more than 2,500 local farmers.
