This coffee doesn’t overwhelm with its multi-layered flavor; it energizes instead: a tropical Colombia that tastes like a sweet Sunday breakfast on the terrace.

 

Overview

Named after the star-shaped fruit carambola, this coffee truly bursts with flavor fireworks. It’s grown at an altitude of 1,780–1,900 meters in the Bruselas region of Huila.

The processing is anything but simple. After harvest, the cherries undergo a short anaerobic fermentation, followed by a thermal shock — alternating hot and cold water — to unlock maximum aroma. Drying is slow and careful, with great respect for the bean.

In the cup: carambola, nectarine, pear, and tutti-frutti–like sweets. This coffee is playful — light, juicy, with a soft body and refreshing acidity. Perfect for filter brewing when you want something bright, but not boring.
